If you live in Colorado, then green chili is truly a staple food. Like scrapple in Pennsylvania, it is served everywhere in Colorado. I never had green chili before living in Colorado, but now I cannot imagine my life without it. This Christmas, Sam’s mom had three different types of green chili — a vegetarian version that Sam’s uncle made, a pork green chili with tomatoes that his mom made and a pure green chili (also with pork) that their friend made. All three were delicious and unique in their own special ways.
Sometimes green chili is so hot it gives you the hiccups. This type of green chili is so delicious! You just keep eating it and eating it (and hiccupping) and your mouth is burning but you love it. Other green chili is kind of mild and you just chow it down — also delicious! It truly is a wondrous food. And when you have some, you can use it in huevos rancheros, Colorado style. Sam’s mom made this on Christmas morning. I was thrilled to learn how to make this dish and equally thrilled to be able to enjoy it as a great kickoff to a fabulous Christmas!

This recipe serves about 4 people
Ingredients
- 6 eggs, scrambled
- 4 flour tortillas (preferably from Albuquerque, Mexico or New Mexico)
- Pork green chile – (this recipe is also on my blog)
- 1 tbsp. butter
- Shredded cheese (such as firm goat cheese)
- Kosher salt and ground black pepper to taste
- Roasted red pepper (optional)
Instructions
Scramble the room temperature eggs and add a little bit of water. Heat the butter in a pan and pour in the eggs. Add the chopped roasted red pepper to the eggs, if you prefer. Once the eggs are nearly cooked, add some shredded cheese. For this recipe, we used firm jalapeno goat cheese that is homemade (near Pueblo) and is to die for good.
In a separate pan, warm up the tortillas over low heat on both sides.
Now, add the scrambled egg mixture to the tortillas, add some pork green chili inside, roll up the tortillas and smother with more green chili. Top with some shredded cheese and serve.










Now I know what I want for breakfast the next time I am there.
