My homemade pizza dough makes two pizzas. It also makes two calzones. I was making sausage, onion and pepper calzones (from leftover sausage, onions and peppers), so I thought I’d make a cheese calzone with the other half of the dough. This recipe will serve 2 to 3 people.
- Homemade pizza dough
- 8 oz. ricotta cheese
- 1/2 cup shredded mozzarella
- 3 slices provolone cheese
- 1/4 cup shredded parmesan
- 2 tsp. fresh basil
- 2 tsp. fresh thyme
- 1 egg
- Kosher salt
- Fresh ground pepper
Preheat your oven to 500 degrees. Roll your prepared pizza dough into a pizza shape. Mix the ricotta, basil, thyme, salt and pepper thoroughly. Spoon it onto 1/2 of the rolled-out pizza dough. Sprinkle the mozzarella over the ricotta. Lay the slices of provolone on top. Sprinkle the shredded mozzarella over top. Sprinkle the parmesan over the mozzarella. Finally, lay the slices of provolone on top.
Fold the dough over the filling. Crimp the edges. Place the calzone on your pizza pan. Now whisk the egg. With a pastry brush, brush egg yolk over the top of the dough. Sprinkle with a little bit of kosher salt. The egg will help to brown the outside of the calzone. Cut a few slats in the top of your calzone. This will allow steam to vent. Bake for about 16 to 20 minutes.
Let it sit for a few minutes before serving. Serve with a side of tomato sauce, if you like!
